Hot water for washing pads is good for removing grease, stubborn dirt, bacteria, germs, and other residues. The higher temperature removes everything faster, but both are good for regular automatic maintenance.
Yes, you are right. The X40 Ultra obtains higher suction power, a liftable, extended, and anti-tangled side brush, and a higher washing temperature for mopping pads. But in terms of extendable mopping pads, both robotic vacuums have them. Navigation, obstacle avoidance, and control systems are also the same for both.
I recommend Dreame X40 for its higher suction power; it will better clean high-pile carpets. But please check the height of your carpets; they may be too high for the robotic cleaners. They also have automatic settings to lift the mopping pads 10.5 mm, which may not be enough for you. Almost all robotic cleaners are not designed for high-pile carpets.

Dreame X30 and X40 have dirt detection sensors installed both in the robot to remop the floor to remove sticky dirt and on the base station to rewash the mopping pad if necessary. These sensors automatically adjust suction power and water level for better cleaning.
The construction of water tanks is the same for all robots that do not have a base station with refilling functions. The tank is removable and has a rubber plug that you need to open to fill it. After filling the tank, you need to insert the plug back in and put the tank in the proper location in the robot.
